US consumers are clueless about glutenFad diets come and go, but few have had the staying power of gluten-free. While just one in every 133 Americans suffers from celiac disease – an intolerance to gluten – around 23% claim to be cutting down on bread or baked goods in a bid to avoid it. But would they even know gluten if they saw it?
