Arthur Gallego

Arthur Gallego is an award-winning expert in food and beverage marketing as well as the consumer psychology behind trends. From 2020 to 2022 he incubated an alcoholic beverage start-up for venture capital as a CEO, having often served in the past as a start-up CMO for different brands.

Gallego’s expertise also covers cosmetics, fragrances, hospitality, real estate marketing, and media, but his consultancy’s focus is on consumer packaged goods. Gallego is a sought-after expert on trends and regularly shares his perspectives with the media, analysts, and researchers. His insights have appeared in The Wall Street Journal and The New York Times, and on CBS News and MSNBC.

Jane Peyton

Jane is an alcoholic drinks consultant, educator, writer broadcaster, public speaker, and founder of the School of Booze. She's the author of eleven non-fiction books, including books about beer, gin, and cocktails, and is the UK’s first accredited Pommelier (cider sommelier). Jane is also an accredited beer sommelier and is accredited with the Wine & Spirit Education Trust.

Her professional awards include former Drinks Educator of the Year and a lifetime achievement award from Britain's Parliamentary beer group for her work in beer.

Avril Treasure

Avril Treasure has been a freelance lifestyle writer for a decade, contributing to Broadsheet, Delicious, and Urban List NZ. She joined Time Out Sydney in 2022, becoming food and drink writer in 2023 and editor in 2024. Treasure explores Sydney’s food and drink scene to inspire others to eat, drink, and explore well.

Bailey Bellingy

Bailey Bellingy is a behavioural analyst at Canvas8. After completing a BSc in social sciences, she joined the world of cultural insights. Throughout her degree, Bailey gained experience across social research methods, focusing on sociology, gender, and race studies. With experience on a range of qualitative projects, her practice focuses on incorporating diverse narratives. Outside of Canvas8, she can be found stocking up on Glossier or browsing Jane’s Patisserie for recipes.
